The only other odd ball engine I know of in terms of 'stat' positioning is the Rover K series. Gauge reads fine, it was just my curiosity thats all. A new radiator fan temp switch is operting the fan correctly. The cooling fan by the way is electric and mounted behind the rad (pulling air) and has no viscous mechanical fan. Apparantly these engines are known for cracked blocks. Coupled with the rather higher than normal 'stat' rating of about 105 degrees (as opposed to the more usual 88 degrees on other cars) it seems a recipie for high operating temperatures. By positioning it in the return side then cooler water trying to enter the engine again would try and keep it closed longer. in the top hose then exiting hot water keeps it open allowing flow to take place.
